Simply slice chewy dates, stuff them with creamy peanut butter, and drizzle with honey, shredded coconut, and mini chocolate chips. Store the dates in the freezer and enjoy them as a healthier option when you are craving something sweet in the afternoon or late at night. These chocolate peanut butter stuffed dates will be one of your new go-to snacks!

What is so great about dates?

Dates are an underrated food! I can say that because I spent years not even knowing what a date was, and then avoiding them because they seemed weird. I eventually tried dates because I realized so many delicious, healthy energy bite recipes will use dates as an ingredient because of the sweetness and texture they provide. Trust me, my world was rocked when I gave these a chance!

So why is date such a common ingredient in healthy recipes? It might be because dates have so many health benefits! This dried fruit is a good source of vitamins and minerals, energy, and fiber. Dates are known to lower cholesterol, contain protein and healthy fats, improve bone health, help digestion, and help your skin. While dates are not necessarily a low calorie food, they can provide so many awesome nutrients to keep us healthy and well.

What ingredients do I need for this recipe?

This recipe only requires 5 ingredients. If you don't have all of these ingredients, you can customize this snack based on what you have available in your pantry.

  • Pitted dates - Dates are the star of the show! They are the main vessel for this snack that is stuffed and topped with delicious ingredients. The dates will need to be pitted so you can either buy pitted dates OR pit the dates yourself by slicing them open and taking out the pit.
  • Peanut butter - Creamy peanut butter is the main stuffing for this snack. I like to use a creamy all-natural peanut butter, but you can use whatever you have available.
  • Honey - You will use honey to drizzle over the stuffed dates. Honey will provide sweetness and help the coconut and chocolate chips stay on the dates.
  • Shredded coconut - I love coconut so it was a no-brainer for me to add a little onto the dates. If you don't like coconut, this ingredient isn't required!
  • Chocolate chips - Adding a few chocolate chips onto each date is where the chocolate will come in. If you want to be extra fancy, you could even melt the chocolate and drizzle it on top.

What substitutions can I make?

There are a few substitutions you can make to this recipe!

  • Dates - The main ingredient you should keep is the dates. It is the main ingredient for the toppings!
  • Peanut Butter - Any kind of nut butter can be a stuffing for the dates. You could use almond butter, sunflower butter, a flavored peanut butter, or whatever fits your dietary needs.
  • Honey, Coconut, and Chocolate Chips - I chose these toppings for the dates because it's what sounded yummy to me! None of these are required (though I would recommend keeping the chocolate) and you can customize the toppings based on your preferences.

What is the process for this recipe?

Okay, y'all. This process is EASY. It might get a little busy for a minute, but you won't be able to mess this up!

  • Gather all ingredients.
  • Place a piece of parchment paper onto a baking sheet.
  • Slice open all of the dates (and make sure there aren't any pits).
  • Stuff each date with peanut butter.
  • Drizzle honey on top of each date.
  • Top the dates with coconut and chocolate chips.
  • Place the baking sheet into the freezer for at least 20 minutes.
  • Enjoy!

How do I store these?

I like to store my chocolate peanut butter stuffed dates in the freezer. I think they taste really delicious when they're cold, plus they will last longer. Once you finish making the recipe and after you taste test at least one date, store them in an airtight container for up to 3 months.
